06 2 tablespoons honey (optional, for drizzling)
07 Fresh mint leaves (optional, for garnish)

Directions

Step 01

Combine dry ingredients: Whisk together flour, brown sugar, baking powder, baking soda, salt, ground ginger, cinnamon, cloves, and nutmeg in a large bowl until evenly mixed.

Step 02

Prepare wet mixture: In a separate bowl, whisk eggs, buttermilk, whole milk, melted butter, molasses, and vanilla extract until smooth and uniformly combined.

Step 03

Incorporate wet and dry mixtures: Gently fold the wet ingredients into the dry ingredients, mixing just until combined to avoid overmixing, which can toughen the batter.

Step 04

Heat cooking surface: Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil to prevent sticking.

Step 05

Cook gingerbread-shaped pancakes: Use a gingerbread man-shaped cookie cutter on the skillet as a mold or shape batter freehand. Pour about 1/4 cup batter per pancake and cook until bubbles form on the surface, approximately 2 minutes. Remove the cutter, flip the pancake, and cook an additional 1 to 2 minutes until golden brown and cooked through. Repeat for remaining batter.
