07 - 1 large head romaine lettuce, chopped
08 - 1 ripe avocado, sliced
09 - 1 cup canned black beans, drained and rinsed
10 - 1 cup sweet corn kernels (fresh or frozen, thawed)
→ Salsa-Lime Dressing
11 - 1/3 cup salsa
12 - 2 tablespoons fresh lime juice
13 - 1 tablespoon olive oil
14 - 1/4 teaspoon garlic powder
# Directions:
01 - Rub chicken breasts with olive oil, ground cumin, chili powder, sea salt, and black pepper. Preheat grill or grill pan over medium-high heat.
02 - Grill seasoned chicken breasts for 6-8 minutes per side until fully cooked and juices run clear. Transfer to cutting board and allow to rest for 5 minutes before slicing.
03 - Chop romaine lettuce and slice avocado. Drain and rinse black beans. If using frozen corn, thaw before assembling.
04 - Arrange romaine lettuce in serving bowls. Top with sliced grilled chicken, avocado, black beans, and sweet corn.
05 - In a small bowl, whisk together salsa, fresh lime juice, olive oil, and garlic powder until fully combined.
