# What You'll Need:

01 - 8 slices whole wheat or white sandwich bread
→ Filling
02 - 4 oz cream cheese, softened
03 - 2 tbsp mayonnaise
04 - 1/4 red bell pepper, finely diced
05 - 1/4 yellow bell pepper, finely diced
06 - 1/4 cucumber, finely diced (seeds removed)
07 - 1 small carrot, peeled and grated
08 - 2 tbsp chives or green onions, finely chopped
09 - Salt and freshly ground black pepper, to taste
→ Decoration (optional)
10 - 2 cherry tomatoes, sliced
11 - 2 tbsp pomegranate seeds
12 - Fresh basil or parsley leaves
# Directions:
01 - Using a star-shaped cookie cutter, cut a star from each bread slice. Reserve the scraps for breadcrumbs or other use.
02 - In a mixing bowl, blend cream cheese and mayonnaise until smooth.
03 - Fold in finely diced red and yellow bell peppers, cucumber, grated carrot, and chopped chives. Season with salt and freshly ground pepper.
04 - Spread a generous layer of the vegetable cream cheese mixture on half of the star-shaped bread pieces.
05 - Top the spread bread stars with the remaining bread stars to form sandwiches.
06 - Gently press slices of cherry tomato, pomegranate seeds, and fresh herbs into the top of each sandwich to resemble jewels.
07 - Arrange sandwiches on a serving platter and serve immediately, or cover and refrigerate up to 2 hours before serving.
